Here’s what you need:
- 1 ½ cup of wheat flour (whole grain)
- ½ cup of oat flour (whole grain)
- 1 tbs baking soda
- 1 tbs cinnamon
- ½ tbs salt (preferably sea salt)
- ¼ tbs nutmeg
- 1 clove
- 2 tbs mace
- 1 tbs allspice
- ½ cup oil (preferably coconut oil)
- 2 eggs (large)
- 2 cups of processed pumpkin (puree)
- 1 tbs vanilla extract
- 1 tbs molasses
- ½ cup of coarse chopped nuts (walnuts preferably)
Preheat your oven to 300 degrees. Also prepare your food processor which you have. I have used my Cuisinart FP-14 Elite Food Processor.
To create this wonderful food processor recipe, what you have to do is to mix all dry ingredients well, and then slowly add the wet ingredients portion by portion. For example, when adding the eggs, do it one egg at a time. The same process goes when it comes to the pumpkin. Add the pureed pumpkin portion by portion, to make sure that it is well blended. Try not to process your ingredients too much, because doing this will just affect the consistency of your batter for the bread.
Once done, get your greased pan, and pour over your mixture. Top it with nuts before baking. Let it bake for at least 1 hour and 15 minutes. Poke a toothpick at the center of the bread. If the toothpick is clean after poking, it indicates that your bread is cooked thorough not only in the outside, but in the inside as well.
Let your bread cool on a cooling rack before slicing. You can serve this bread with cream cheese, jam, or anything you want.
